Charred Scallion Salsa Verde
A quick and easy go-to Italian style salsa verde recipe that can easily be made without the scallions.
Ingredients:
1 bunch scallions
1 bunch parsley
3 Tbsp capers
4 cloves garlic
4 anchovy fillets
Juice of 1 lemon
2 Tbsp olive oil
Method:
Heat up a cast iron skillet (or stainless steel)
Once hot add a bit of oil and your scallions.
Seer until blistered and charred then remove from pan
Pour 2 Tbsp olive oil and your 4 crushed garlic cloves into a small pan over medium-low heat
Once the garlic starts to simmer add your anchovy fillets and capers. Allow this mixture to simmer for 3-4 minutes. Adjust the heat to low if the garlic is getting color- you want to keep it pale.
Add all ingredients to a food processor or blender and pulse until desired consistency.
Enjoy as is or if you’d like the sauce to be a bit thinner just add a little more olive oil once removed from food processor.
