Charred Scallion Salsa Verde

A quick and easy go-to Italian style salsa verde recipe that can easily be made without the scallions.

Ingredients:

  • 1 bunch scallions

  • 1 bunch parsley

  • 3 Tbsp capers

  • 4 cloves garlic

  • 4 anchovy fillets

  • Juice of 1 lemon

  • 2 Tbsp olive oil

Method:

  1. Heat up a cast iron skillet (or stainless steel)

  2. Once hot add a bit of oil and your scallions.

  3. Seer until blistered and charred then remove from pan

  4. Pour 2 Tbsp olive oil and your 4 crushed garlic cloves into a small pan over medium-low heat

  5. Once the garlic starts to simmer add your anchovy fillets and capers. Allow this mixture to simmer for 3-4 minutes. Adjust the heat to low if the garlic is getting color- you want to keep it pale.

  6. Add all ingredients to a food processor or blender and pulse until desired consistency.

  7. Enjoy as is or if you’d like the sauce to be a bit thinner just add a little more olive oil once removed from food processor.
